Tonight: Ohio-Grown Gazpacho and Fried Eggplant with Mozzarella and Provolone Cheeses.


Gazpacho:
A variety of seasonal Ohio-grown "tomaters" (of unknown poundage)
1 cucumber
1 green pepper
1 hot pepper
A clutch of basil
1/2 tsp salt
1/4 olive oil
1 tsp white wine vinegar
1 large carrot
1 large clove minced garlic
Lightly pulse all ingredients in a food processor.
Chill. Serve. Garnish with bacon

Fried Eggplant with Cheese
- Super Finley Slice 1 medium large Ohio eggplant
- Salt eggplant and coat with a mixture of seasoned breadcrumbs and flour
- Pan fry until tender and brown in olive oil
- Place in "warmer" while layering with mozzarella and provolone cheeses
- Salt, serve, garnish with bacon
